Holyrood Distillery börjar byggas i maj

Inte sedan Glen Sciennes stängdes någon gång på 1920-talet har Edinburgh haft ett eget destilleri. Men i Maj i år börjar förvandlingen av the Engine Shed på St Leonard’s Lane från ruckel till Holyrood Distillery!

I fredags blev det nämligen klart att de har lyckats samla in de £5.8 miljonerna som behövdes för att kunna sparka igång projektet.

De kommer att börja med byggnationerna i maj i år och planen är att de kan börja producera råsprit våren 2019.

I det pressmeddelande de skickade ut säger Rob Carpenter, Grundaren till Holyrood destilleriet följande:

With a lot of hard work and effort by the whole team, and working with the supportive and highly professional team at Scottish Investment Bank, we have reached our fundraising target, allowing us to bring the distillery to life. We can now move on to the fun part – building our new distillery and visitor centre and making delicious spirits. We want our customers to be our guides, helping us shape and build the spirits and flavours that they most enjoy. It’s a new collaborative approach to spirit production that we are all truly excited about and one which we believe offers something quite different from other distilleries

Teamet bakom detta projekt består av David Robertson, tidigare Master Distiller hos The Macallan, och Rob och Kelly Carpenter, grundarna av den kanadensiska delen av The Scotch Malt Whisky Experience.
